Have i mentioned that i am obsessed with kids clothes?! It probably all comes from playing with Barbie's as a little girl. I would change their clothes and cut their hair more than i would actually play with them! I have always loved beautifying things. Maybe that is why i chose to be an interior designer. There is something about out with the old and in with the new, something about change that just drives me. My poor little sister always had a first hand experience with my outbursts of change and creativity. She was like my own life-sized Barbie doll that i would cut and style her hair, or pick out her clothes every single day. On days that i didn't pick out her outfit, she was usually the victim of my harsh statement, "Melany, you probably should go change. That's not very cute". That sounds so rude i know, but you get the point. (i love you Melany!)

That all being said; i was at Target yesterday getting some things for Bailey's bachelorette party tonight, and i found myself wandering into the little girls section looking at all of the adorable dresses and flower headbands. It made me so excited to have my own kids one day (this is not an announcement). That is obviously not the only reason that i am excited to have my own kids one day, but it will be fun having little munchkins to dress up. It's not abnormal for me to browse sites such as babyGAP and Janie and Jack to come up with cute outfit ideas, so today i thought i would share some of the little outfits i put together.

OUR WEEK

Hey Guys! Sorry i haven't given our little blog any attention in awhile. We've been pretty busy lately. Let me fill you in on our week. Wednesday evening McKay surprised me and took me to Pepper Bellys, it's a great little Mexican food eatery that we just love. Thursday, McKay worked and had class, i met him and some of his friends for lunch at Rumbi and then i went on a run to RC Willey to pick up some accessories for a model home i am helping with for Henry Walker, then swung by career day at LDSBC, came home, made dinner, did laundry, and hung out with my hubs/ watched him study the rest of the evening. Friday, McKay had work and school again {as he does every Monday through Friday} while i went out with my mother in-law, Lisa and sister in-law McKenzie to watch our little genius nephew Joseph while his Mom went to a doctor's appointment. I say genius because oh my heavens you would be amazed at this little guy. He is not even two years old yet and he has books memorized, he can read small words, he can tell time, he knows all of the shapes and can even tell the difference between a hexagon, a pentagon, and an octagon. We watched him for a couple of hours and then when his Mom, Melody got home we went out to lunch to Rumbi {can you tell i love that place??}. After lunch we drove home and i did some cleaning and made some cupcakes for a dinner party we were going to that night at my Aunt's house. When McKay got home from work, we drove down to pick up my sister and then drove out to my Aunt Pam's house in Day Break. A few of my cousins and their kids were there and it was so much fun hanging out with them. 
On Saturday i worked all day at David's Bridal. it was a long and good day, but that night i was ready just cuddle up on the couch with my husband. McKay picked up a pizza and a Red Box and we had a relaxing date night at home which was very much appreciated. i just love coming home to this man. On Sunday, we prepared our Primary lesson, went to church, and went to McKay's Grandparent's house for dinner that night where we ate some of his Grandma's amazing apple pie that is always cooked to perfection. On Monday mornings i tutor a first grader and a third grader at an elementary school by my house. After tutoring i headed off to the model home we are working on for Henry Walker Homes for the first big install day. i was pretty much there all day decorating and playing with one of the other designer's new born baby girl. :) That night i made dinner and worked on a school project while i watched the Bachelor. McKay studied for his big test that he took today and then we went to bed. 

Today consisted of school, going to the IRS building, the bank, McKay working and taking his test, grocery shopping, laundry, making dinner, and hanging out with my hubby. It has been quite the busy week, but a good one. Tomorrow is another install day at the model home and i am excited to see it all finished.

 A JILLIAN MICHAELS WORKOUT VIDEO



Just completed Jillian Michaels: 6 week Six-Pack workout and it was killer!  i am always excited to watch the Oscars. i absolutely LOVE seeing all of my favorite actresses dressing up in amazing gowns to enjoy an evening of glamour and awards. Here were my top 6 favorite dresses of the night. My number one favorite dress was Jennifer Lawrence's beauty by Dior Haute Coutoure. The dress forms a perfect silhouette that looks incredible on her. i told the husband how amazing i think it would be to be at the Oscars in a designer gown meeting all of the stars and seeing the performances live. For some reason it made no sense to him why i would like that kind of thing. i told him the Oscars is like the equivalent to the ESPY's for sports... then he finally understood.

OUR V-DAY VACATION

Sorry it's been a few days since i have posted anything on my little blog, we have had a busy/fun-filled weekend and all i wanted to do was not think about anything except being with my family. On Thursday, (Valentines Day) we were driving down to St. George for my sister in-law's wedding on Friday and decided that our big Valentine's gift to each other was to spend the rest of the weekend in Vegas. We still had work and school on Thursday, so we showed our love for each other in little ways. When i woke up that morning McKay surprised me with Roses and chocolates, and little love notes around the house. i made Red Velvet Crepes and a put a little Valentine's Day twist on his lunch by cutting his sandwich into a heart and adding some V-Day m&m's and a love note. That evening, we packed up and drove to St. George. We stayed at our friend's second home there with McKay's sister Mandy, her husband, and 3 kids. Friday morning i went on a run and the weather was amazing. Then we got ready for the wedding and met my parents at Kneaders for breakfast. After breakfast, we went to the sealing. It was really cool being in the St. George Temple because i had never been and that's where my parents were married. After the ceiling, we took pictures outside of the Temple and went to the luncheon and reception. 

That night we went back to the house. Mandy's little one year old, McKinley, had a stomach ache and didn't sleep at all the night before or get a nap all day so she was cranky and exhausted but kept fighting her parents and would not go to sleep. We felt really bad for them and we offered to take McKinley for the night so they could get some sleep. It was an interesting night. It was about midnight or later before she fell asleep, and kept waking up in the night. McKay was really cute with her. He would cuddle with her when she would cry until she fell back asleep. We sort of got a glimpse into our future that night.

The next morning we drove down to Vegas and stayed with my family the rest of the weekend. The weekend consisted of a Bridal Shower, hanging out with some of my closest cousin's and their babies, shopping, going out to eat, going to church, playing games, hot tubbing, and soaking up the sun in my parent's back yard. It was so nice to be there with my family in the warm Vegas weather.

A VALENTINE'S TREAT
(Red Velvet Crepes)


Here is a tasty recipe that i found  via duhlicious.com on Pinterest this morning and i am so excited to make it for McKay for breakfast tomorrow. Here's the recipe: 


Ingredients:– 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons sugar
- 2  cups butter milk
- 1 1/4 cup whole or lowfat milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons cocoa powder, sifted
- 1 tablespoon red food color gel
- 2 tablespoons unsalted butter, melted
+ 2 tablespoons cooking oil (for pan)
*Update: Because the buttermilk lends to the acidity of this batter, do not substitute the baking soda for extra baking powder. If you add more baking powder, and omit the baking soda, you’ll end up with a heavy and dense crepe. In order to activate the baking soda, it requires an acidic substance, which the buttermilk provides.  Double-acting baking powder (likely, this is what you have in your kitchen) is activated by heat and an acidic element, and in this case, baking soda does the trick.  Enough with the chemistry lesson– just don’t make substitutes if you want light and fluffy crepes; the recipe is balanced to account for ingredient properties.
Mascarpone Cream Filling- 500 mL heavy cream
- 300 gr mascarpone cheese
- 1/2 cup icing sugar
- 1 teaspoon vanilla extract
- zest of 1 orange (optional, but adds nice tang)
+ 1/2 cup raspberry jam (optional, for filling crepes)
Chocolate Ganache  Topping- 75 gr bittersweet chocolate
- 75 mL heavy cream
- 1 tablespoon sugar
Directions:
For the Mascarpone Filling:
1. Using a mixer, mix mascarpone cheese, 1/4 cup sugar, and vanilla until soft and fluffy.  Set aside.
2. Whip cream and remaining sugar to a stiff peak. Carefully fold into the mascarpone cheese until combined. Refrigerate until ready to use.
For Chocolate Ganche Sauce
1. Place chocolate in a heatproof bowl and set aside. In a small sauce pan, heat cream and sugar to a rolling boil. Remove from heat, and pour over chocolate. Carefully mix until homogenous, and set aside until ready to use. If the ganache sets, re-melt the chocolate over a double boiler.
Red Velvet Crepes1. In a large bowl stir together flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
2. In a separate bowl, whisk together the buttermilk, milk, egg, sugar, melted butter, vanilla extract and food coloring. Whisk until combined.
3. Pour the liquid ingredients into the mixing bowl with the dry ingredients, and stir with a wooden spoon until the dry ingredients are combined. The batter will be a little runny (think soup). If you find that the batter is too thick and pancake like, add more milk (regular). Make sure the batter is clear of lumps.
4. With a pastry brush, brush the surface of large (non-stick) skillet with cooking oil. Heat it over medium heat. Test skillet after a couple of minutes by drizzling a few few drops of water onto the cooking surface. If the drops sizzle and evaporate, the surface is hot enough.
5. Turn the heat down to medium. For each crepe, spoon or ladle about  1/4 cup of the batter into the center of the skillet. Holding onto the handle of the pan, remove it from the heat and swirl the pan so the batter coats the bottom of the pan. You want to make the coating as thin as possible. If you have holes in the crepe, go ahead and add more batter to the pan to cover them. Return to heat.
6. As the batter cooks, it will dry and lose its shine (~ 2 minutes). Once this happens, use a non-metal spatula and carefully flip the crepe over. Finish cooking the crepe on the other side (~ 45 seconds).
7. Gently slide the cooked crepe onto an ovenproof plate, and keep the finished crepes warm in an oven set at 195 degrees.
Assembling the Crepes:
- If using raspberry jam, place a small amount the center of the crepe.  Pipe mascarpone cream filling, and carefully roll.
- Drizzle with chocolate ganache sauce and dust with icing sugar.
